A few days ago I visited my grandfather in hospital. He has Alzhemier’s-a degenerative disease that usually starts slowly and gets worse over time. I thought I was prepared to see him. I knew chances were slim that he’d actually recognize me.

He didn’t. As a matter of fact, he had no idea that he even had grandchildren. But he was excited that somebody came to visit him. I tried to explain to him who I was. But after he told me multiple times that he didn’t have grandchildren, I gave up. And my heart broke into a million little pieces.

I was tired of explaining things to him. So I just smiled. He smiled back. It’s a genuine smile. Like a long time ago, when he’d take me by the hand and made this big world a little bit less scary for me. Now I have to take his hand.

We sat in silence for a little while, before he told me to call my grandma. This was the first time I had tried so hard to hold back tears. My grandma died four years ago and he didn’t remember. He thought she was stuck on her way to pick him up.

My grandpa used to be a strong, hard-working man. He was the person you turned to when you needed your car fixed, your tires changed or something heavy to be carried. Sadly, that man left this world a long time ago, and left behind a man that is lost and scared.

Chicken is America’s most popular meat. Many people assume chicken follows a simple rule-of-thumb: Pink chicken turned white means “done” It’s similar to how we cook other meats. But is this true? To study how cooks at home follow safety recommendations, researchers filmed 75 households in five European countries. From a random but nonrepresentative sample, they also conducted an online survey of nearly 4, 000 households in the same countries that say they cook chicken.

Worried that chicken would dry out, most home cooks determined doneness by color and texture (口感) inside the meat, they found. Few bothered with thermometers (温度计), claiming they took too much time, were too complicated to use, didn’t fit in the chicken or weren’t necessary (although easy-to-use thermometers are inexpensive and widely available).

In additional lab experiments, the scientists injected raw chicken breast with bacteria (细菌), which cause millions of sicknesses, thousands of hospitalizations and hundreds of deaths each year in the United States. They cooked the breasts until they reached core temperatures ranging from 122 to 158 Fahrenheit, and they discovered something surprising. At 158 degrees, but not lower, bacteria inside the chickens’ cores was reduced to safe levels, and when cut open its flesh appeared dull and fibrous, not shiny like raw chicken. But meat began changing from pink to white far below this, and most color change occurred below 131 degrees Fahrenheit. Sometimes, the chicken’s core would be safely cooked, but unsafe levels of bacteria still existed on surfaces that hadn’t touched the grill plate.

So what are you supposed to do?

Dr. Bruno Goussault, a scientist and chef, recommends buying and cooking breasts and legs separately. Bring the breast’s core to 165 degrees Fahrenheit, he said, and the leg to between 168.8 and 172.4 Fahrenheit. If you really want to safely measure temperature for a whole chicken, insert a pop-up thermometer into the thickest part of the leg before roasting it, Dr. Goussault suggests. By the time it pops, the breasts will have long cooked. They will likely be dry and far from his standards of culinary (烹饪的) perfection. But you’ll be sure to, as Dr. Goussault says in French, “dormir sur ses deux oreilles,” or, figuratively, “sleep peacefully.”

On January 15,2009, the crew of US Airways Flight 1549 experienced a never-in-a-lifetime event. Less than two minutes after takeoff, some birds found their way into the airplane’s two engines and brought them to a sudden stop. Over the next three and a half minutes, the crew managed to identify the problem, decide what to do about it, and make the most successful emergency landing in aviation(航空)history.

We all experience similar moments. Running into the person you canceled a date with-while you’re on another date. Realizing you hit “reply all” on an e-mail that you’d do anything to have back. Earthquakes, medical emergencies-whatever the situation, the first thing you probably do is panic. Everybody does. While many of us think that we’re cool in a crisis, science tells us that we seldom are. At the moment we need to be keenly aware of our surroundings, but our attention goes to the scariest thing on the scene, leaving us unaware of the other sights, sounds, and even smells around us. At the moment, we’re anything but at our best.

These normal human reactions can be reversed. For example, firefighters are taught how to bring down their blood pressure and heart rates quickly. Box breathing, belly breathing, hum breathing-you can learn these techniques in minutes. Once you calm down, you’ll identify accurately what the problem is really about. Lack of practice always causes us to judge problems in wrong ways. Doing the thinking ahead of time also helps you fire off the solution when it’s show time. This is why you are advised to find the closest exit before the flight. And sometimes we aren’t prepared with all the knowledge we need. Let’s say we’re on a hike and a bear shows up. What shall we do?Better to read suggestions on how to respond before heading into the wild.

Performing in crisis is becoming more important for all of us for two reasons. Back in the good old days, the reliability of most anything we used or did was far less than it is today. Now think about what happens to our preparedness as the likelihood of something bad happening reduces. Unless we practice what hardly ever happens, our ability to respond when it does happen tends to slip away. Reliability can kill you. Also, the systems we use today are more complex. There are seldom moving parts in plain view that allow us to see when things are about to go wrong. Consequently, terrible situations can “come out of nowhere”. Ironically, the systems that were designed to lessen our workload might require us to remain in a state of increased vigilance (警觉) in order to survive these increasingly infrequent events when they do happen.

Is there a link between social media and depression? Do social media have a negative impact on your mental health? It’s complicated.

In a recent study, the investigators compared social media use and depression between teens.__36__Specifically, for every hour per day that one teen spent on social media more than her peers, she likely had a 0.64-point higher depression score.

A different study published in 2018 identified five distinct types of social media users.
